Cacio e Pepe Recipe

- 2 tbsp unsalted butter

Instructions:
- Bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook it according to the package instructions, or until it is al dente.
- While the pasta is cooking, melt the butter in a small saucepan over medium heat. Add the pepper and stir to combine.
- When the pasta is done cooking, drain it, reserving about 1 cup of the pasta cooking water. Add the pasta to the saucepan with the pepper and butter, and toss to coat the pasta evenly.
- Gradually add the grated cheese, stirring constantly, until the cheese has melted and the sauce is smooth and creamy. If the sauce seems too thick, add a little bit of the reserved pasta water to thin it out.
- Season the cacio e pepe with salt to taste, and serve it hot. We recommend garnishing the pasta with a sprinkle of extra cheese and a few grinds of black pepper.
